Move over mashed potatoes, there's a new favorite side dish in town! Today I share with you my best home fries recipe. Also known as baked breakfast potatoes, these roasted potatoes are delicious for breakfast or brunch but also make a drool-worthy dinner side dish, too!

Consider this post the most recent installation of my "ode to potatoes."

Because, apparently, it takes creating a food blog for one to realize how much they love potatoes. On the current count, about 15% of the recipes on this site are potato recipes. Do I need an intervention? 🤔

I guess it's about time I put together a round-up post so all my other potato fanatics can easily find the recipes, too!

As easily as I could ramble on about potatoes, I'll spare you that joy. Instead, let's chat about this new favorite oven breakfast potatoes recipe!

Also known as home fries or oven hash browns, these crispy golden nuggets are just like the home fries you get at your favorite breakfast restaurant.

With savory seasonings (nothing too exotic or hard to find, I promise!) and olive oil, these fries are as fantastic with your favorite brunch spread as they are with a weeknight dinner. Anywhere you would serve roasted baby potatoes or french fries these home fries shine!

They may even steal the show. But that's not too bad of a problem when it comes to food that we love so much, right?

I've been working on this potato recipe on and off for the last 2 weeks now and I have yet to get sick of them. I've eaten these fries for every meal of the day (including a late-night snack) and am happy to report that they always go down well.

These potatoes are pretty simple to make, too. Though they take 2 steps to make, they are pretty straightforward ones: simmering the potatoes for a few minutes and then roasting them with olive oil and spices.

Since this recipe doesn't call for butter, these potatoes are also friendly to many dietary preferences! All gluten-free, vegan, dairy-free, processed sugar-free, and vegetarian friends can enjoy these tots, too. 🙂

Ingredients:

  • Russet potatoes
  • Olive oil
  • Salt
  • Onion powder
  • Garlic powder
  • Smoked paprika

Scrub your potatoes well and double-check our spice dates for this recipe, but otherwise, this is a simple recipe with big flavor!

Substitutions:

  • Potatoes: Yukon gold or golden potatoes also work for this recipe
  • Paprika: sweet paprika can substitute but will not import the same smoky flavor

How to make home fries:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Add the cubed potatoes to a large pot and cover with cool water. Sprinkle the potatoes with salt.
  3. Bring the potatoes to boil and simmer for 4-6 minutes, or until the potatoes are firm when pierced with a fork.
  4. Drain the potatoes.
  5. Spread the olive oil on a large baking pan. Scatter the potatoes on the oiled pan and sprinkle with salt, onion powder, garlic powder, and smoked paprika. Turn the potatoes in the oil until covered evenly in the spices.
  6. Roast the potatoes until they are golden brown and crispy. Serve hot!

  • Stir the home fries throughout the cooking time: this helps the potatoes to crisp up on all sides
  • Use fresh seasonings: fresh seasonings make the world of a difference. Double-check the dates on your seasonings for the best flavor!
  • Confirm your oven temperature with an oven thermometer: ovens can vary widely on their temperature. For the most accurate roasting, use an oven thermometer to ensure that the potatoes are roasting at the right temperature

Ingredients

  • 3 large russet potatoes cut into ½-inch cubes (or 5 ½-6 cups)
  • 2 ½ teaspoons salt DIVIDED
  • ¼ cup olive oil
  • 1 teaspoon onion powder
  • ¾ teaspoon garlic powder
  • ¾ teaspoon smoked paprika

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.

  • Add the cubed potatoes to a Dutch oven or stockpot and cover with cool water. Sprinkle the potatoes with 1 ½ teaspoon salt.

  • Bring the potatoes to boil over high heat. Uncover the potatoes, reduce the heat to medium-high or medium heat and simmer for 4-6 minutes, or until the potatoes are firm when pierced with a fork.

  • Drain the potatoes.

  • Spread the olive oil on a large baking pan. Scatter the potatoes on the oiled pan and sprinkle with the remaining 1 teaspoon salt, onion powder, garlic powder, and smoked paprika. Turn the potatoes in the oil until covered evenly in the spices.

  • Roast the potatoes for 25-28 minutes, stirring the potatoes every 7-8 minutes, or until the potatoes are golden brown and crispy. Serve hot!

Notes

1. Leftovers last covered in an airtight container in the fridge for 4-5 days. Reheat them at 300 degrees in the oven for 5-8 minutes, or until heated through and recrispy.
